Chocolate Banana Bread
4c. oatmeal (not old fashioned)
3c. self rising flour
2/3c. olive oil
1/4c. cocoa
6-7 bananas
1 1/2c. brown sugar
1t baking soda
1t salt
1T cinnamon
1/2 c. black walnuts
3/4c. dried cranberries
8T milk
Cut up banana with a stout wire whisk into a cream with no large pieces. Add oil and milk. Mix. If you aren't already, I hope you are using at least a four quart bowl for this. Add the walnuts and cranberries to mix. Then mix in the salt and baking soda with cinnamon. Mix in the brown sugar (beware sugar clumps). Mix in flour. Lastly, mix in the oatmeal.
Lightly oil a 9 x 13 pan (one of the deep disposable chafing/aluminum pans that are over an inch deep). Dump batter into pan and smooth top before putting into oven or else there will be burnt peaks.
Oven at 350 degrees for 1 hour, let rest in oven for 10 min before pulling out to portion.
